Two Saturdays a month, we host Pop-Up Shops at our bakery! These pop-ups are our favorite way to connect with you and give you a chance to stock up on your favorite sourdough classics—plus try exclusive sweet and savory treats you’ll only find on our Saturday menus.

Each week we host a Pop-Up, you’ll find the pre-order menu posted on Monday. Orders are open until Friday evening, with pick-up on Saturday from 10am–1pm.

 Straw Cove Baking Company was founded in 2022 by Chef Morgan Angelle and her wife Dené Carroll. We are an independent wholesale bakery producing naturally leavened sourdough breads and stone-milled flours for Acadiana from our bakery in Lafayette’s Fightingville neighborhood.

Our breads are made with naturally fermented fresh milled flours and straightforward ingredients. We believe great bread starts with quality grain, careful craftsmanship, and time.

After a decade of living, working, and learning in New Orleans, Morgan and Dené returned home to build Straw Cove for the community that raised them. Today, we are honored to provide whole grain breads to chefs, restaurants, cafés, grocery stores, and market customers throughout the region.

In addition to our wholesale and retail offerings, we host hands-on sourdough baking classes at our bakery, covering a variety of techniques and topics for bakers of all experience levels.
